  1. In a large sauce pan combine the tomato sauce, kidney beans and chili seasoning mix over medium heat and cook until completely heated through.
  2. While chili is cooking, cook noodles according to package directions. Drain thoroughly when done.
  3. To keep this delicious dish warm: place the cooked & drained noodles in a crock-pot. Layer the cooked chili on top of the noodles. Cover and keep on warm or low for up to 4 hours. You will need to turn the crockpot on and off a few times the longer you keep it warming.

Keep it vegan and garnish with a little chopped Cilantro!

Spelt Pasta Puttanesca

It’s simple, flavorful, quick, and easy to make – it’s Puttanesca Sauce and it’s perfect with our Nature’s Legacy Whole Spelt Penne!

This is one of those recipes that has a wonderful balance of flavors – the light sweetness of tomatoes mixed with spicy red pepper and salty, briny capers & olives. It’s wonderfully simple to make and you will be surprised at the amazing flavors you can pull out of ingredients from your pantry.

You will see that this recipe calls for a few anchovy fillets. While they are completely optional, if you’ve never cooked with them this is a fantastic place to start. When you cook the anchovies in the olive oil with the garlic, they pretty much disintegrate – it’s one of those neat cooking phenomena. You won’t see the anchovies, you won’t taste fish. All that is left behind is an extra layer of that salty, briny flavor, enhancing the flavor of the capers and the black olives.

I roughly chop up the capers and olives allowing more flavor per bite but this is something you can feel free to skip if you want to save a step.

Instructions
  1. Cook pasta according to package directions, reserving about a ½ cup of the pasta water before you drain the penne.
  2. In a deep sided saute pan heat olive oil over medium heat and lightly cook the garlic and anchovies until the anchovies dissolve and all you see in the pan is the garlic, this does not take long. Add in the tomatoes, red pepper, capers and olives. Cover pan and simmer over low heat for about 5 to 10 minutes.
  3. Add in cooked penne, thinning out the sauce with a little of the reserved pasta water if needed.
  4. Serve with a sprinkle of fresh oregano and parmesan cheese.
Recipe Notes

Sauce can easily be made vegan by leaving out the anchovies and parmesan cheese!!

  1. Bring a large pot of water to a boil and salt it.
  2. Put olive oil in a large skillet over medium heat. Add zucchini, onion, and thyme; cook and stir occasionally.
  3. Add salt and pepper and adjust heat so onion and zucchini release their liquid without browning.
  4. Cook for about 20 minutes, or until very tender.
  5. Add tomatoes and their liquid to zucchini, and raise heat a bit so mixture bubbles.
  6. Cook pasta until it is nearly but not quite tender. Drain pasta, and finish cooking it in sauce.
  7. If sauce threatens to dry out, add a little pasta cooking water.
  8. Serve, garnish with parsley and/or Parmesan.
  9. Enjoy! 🙂

  1. Cook pasta according to package directions. VitaSpelt or Nature's Legacy pasta should cook in about 5 minutes.
  2. Combine minced garlic with 1/4 teaspoon salt, blend together with a fork to make a paste.
  3. Whisk garlic paste together with Parmesan cheese, olive oil, lemon juice, and red pepper flakes. Salt and pepper to taste.
  4. Chop kale into 1/2 inch squared. Place kale into large serving bowl and massage kale with the dressing for about 5 minutes to tenderize the greens.
  5. Toss strained pasta with pine nuts, kale, and dressing; coating well. Serve with sliced lemon and additional freshly grated Parmesan cheese.

The difference between garden fresh tomato and your average grocery store tomato is insane.  They don’t even taste like the same product.  When tomatoes are in season, they don’t need a lot of fuss to taste wonderful.  This pasta sauce doesn’t require any cooking and is great on warm pasta or leftover pasta served cold.  The cheese in this dish is optional, but the addition of feta or Parmesan cheese gives this dish versatility.

Chimichurri Pasta Sauce – With Angel Hair or Spaghetti

Chimichurri is an Argentinian sauce commonly used there as a marinade and sauce for grilled meat.  It is similar to pesto and a great use for extra herbs from your garden or the farmer’s market.  It is light and zesty and therefore perfect to enjoy in the summertime.  This versatile pasta could be used as a side dish next to grilled meat, or as a main dish along with some fresh vegetables or meats mixed into the pasta.  There are two ways to prepare the chimichurri sauce, with everything chopped up and mixed together (much like a salsa) or by pureeing everything in a food processor.  It is fun to experiment and try both techniques.

  1. Cook pasta according to package directions. Nature's Legacy or Vita-Spelt pasta should cook in about 5 minutes.
Chimichurri Sauce:
  1. Combine red wine vinegar, 1 teaspoon salt, minced garlic, finely diced red onion, and chili flakes in a medium bowl and let stand for 5 to 10 minutes.
  2. Stir in cilantro, parsley, and oregano. Slowly stir in oil with a fork. Season with salt and pepper to taste.
Alternate Chimichurri Instructions:
  1. Remove stems from fresh herbs. Puree all ingredients in a food processor or blender. Season with salt and pepper to taste.
  2. Toss cooked pasta with about 1/2 cup sauce. Extra sauce makes a great marinade, sandwich spread, salad dressing, or salsa.

  1. Place chopped onion and garlic in olive oil in large stainless steel pan. Sauté until onions are golden brown. Add ground beef. Sauté until brown.
  2. Add Pomi tomatoes, salt, and pepper to taste. Add one teaspoon of organic sugar if desired. Stir all ingredients.
  3. Cook on medium low heat for 20 to 25 minutes, stirring occasionally. Add chopped basil.
  4. Prepare pasta according to instructions. Drain, and put back in pan with 1 cup meat sauce. Lightly toss.
  5. Place pasta on a platter, and cover with sauce. Garnish with fresh basil.
  6. Enjoy! 🙂

  1. Bring water to a boil in saucepan.
  2. Add pasta; reduce heat and gently cook until desired texture is reached.
  3. Drain water in colander and return to pan.
  4. Gently stir in cheese, milk, butter, and sea salt into pasta.
  5. Place in bowls or on plates and top with desired amount of parsley or oregano.
  6. Options: Serve with poultry, fish, or beef, and a salad. Add peas, broccoli florets, or other veggies. Spelt pasta comes in all shapes, and there is also a whole grain variety.
